Plant Profile
Sesamum indicum, better known as sesame, is a small seasonal plant grown mainly for its seeds. These seeds are one of the oldest sources of edible oil known to people. The plant grows upright, usually around one meter tall, though this changes with climate and soil. Sesame has soft green leaves that are broader near the base and narrower near the top. The flowers grow close to the stem and are usually white or pale pink. After flowering, long narrow pods form. As the pods dry, they split open and release the seeds. This natural cracking is one reason sesame must be harvested carefully. The seeds themselves are small and flat. They may be white, brown, or black depending on the variety. What makes them special is their high oil content. Sesame Seed Oil is extracted from fully mature seeds, traditionally by pressing. Cold-pressed oil is preferred when the goal is purity and long shelf life. Sesame grows well in warm, dry regions and does not need heavy irrigation. In India, it has been cultivated for thousands of years and is commonly grown in Rajasthan, Gujarat, Madhya Pradesh, Uttar Pradesh, and southern states.
