Brassica nigra, commonly called black mustard, is a tall annual plant grown mainly for its sharp, pungent seeds. The plant grows quickly and can reach close to two meters in height. It has a firm main stem with several branches. The lower leaves are large and deeply cut, while the upper leaves are smaller and smoother. Small yellow flowers appear in clusters during the flowering stage. These later turn into short seed pods that sit close to the stem. Inside each pod are tiny round seeds that range from dark brown to almost black in color. Black mustard grows best during cooler seasons and adapts well to different soil types. Although it originally came from regions around the Mediterranean and West Asia, it has been grown in India for a very long time. Today, it is commonly cultivated in states such as Rajasthan, Uttar Pradesh, Madhya Pradesh, and parts of eastern India. After harvesting, the seeds are cleaned, dried, and pressed to obtain oil. Traditional pressing methods are still widely used, producing a dark oil with a strong smell and intense heat.
