Plant Profile
Apium graveolens, also called Celery or Ajmoda, is a herb that can live for two years or more. It belongs to the Apiaceae family. The plant usually grows 30–60 cm tall. It has upright, grooved, and juicy stalks with shiny green leaves. When it flowers, it produces small creamy-white flowers in clusters. These flowers make small, oval, aromatic seeds. Celery originally comes from the Mediterranean, but now it is grown all over the world. In India, it is grown mainly as a winter crop in Punjab, Haryana, Rajasthan, and Uttar Pradesh.

Health Benefits
In Ayurveda, celery (Ajmoda) is used to help digestion and relieve stomach pain. It balance the Kapha and Vata doshas. Celery is also used to support urinary health and joint comfort, and it may help remove toxins from the body. Its warming effect makes it good for improving digestion and blood circulation.

Phytochemical Composition
Celery has many natural chemicals that make it healthy and give it its unique smell. The main compounds are called phthalides, like 3-n-butylphthalide (NBP) and sedanolide. The seeds has essential oils like d-limonene and beta-selinene, and flavonoids like apigenin, apiin, and luteolin. Celery also has phenolic acids (such as caffeic acid), furanocoumarins (like bergapten), and fatty oils with petroselinic acid. These chemicals work together to make celery healthy.
