Brassica alba, commonly called yellow mustard, is a simple annual plant from the mustard family. It grows upright and usually reaches about 60 to 90 cm in height. The stems are firm and branched. The leaves are rough in texture, green in color, and slightly lobed near the base. During flowering, the plant produces small, bright yellow flowers with four petals. These flowers later form narrow pods that hold round, pale yellow seeds. Yellow mustard grows naturally in the Mediterranean region and parts of Western Asia. Over time, it adapted well to different climates and is now cultivated widely. In India, it is grown mainly in Rajasthan, Haryana, Uttar Pradesh, and Madhya Pradesh. The seeds are harvested once the pods dry on the plant. These seeds are then cleaned and pressed to obtain yellow mustard seed oil. Compared to black mustard, the oil is lighter in color and has a softer smell and taste.
